There are sauces that can be homemade or purchased and used with any kind of food. Sauces which can be smooth or chunky usually provide added flavor to a meal. They are used with different meats, vegetables, and potatoes especially mashed potatoes. Special sauces like salad dressings and vinaigrettes make great tasting salads of all different varieties. When you are grilling BBQ sauce brings out the flavors of the meats and when you’re sautéing a great sauce to use is stir fry sauce with inexpensive ingredients. When you make a meatloaf with mashed potatoes the dish might not look too appetizing because the ingredients are plain but add bechamel sauce and you have a dish that looks mouth watering. Sauces that everyone should know how to make

Veloute is similar to béchamel but uses light-colored stock made of chicken, fish, or vegetables instead of milk. You can add different ingredients to this sauce like shallots, mushrooms, and white wine. There is also a Chinese version of this sauce for stir fries or fried rice. It is a simple sauce to make using butter, a cup and a half of flour to make a roux and 3 cups of chicken stock.

Espagnol or Brown Sauce is a simple brown gravy that can be used as a base for steak sauce, mushroom sauce, Madeira sauce, and others. If used equal parts of butter and flour. Then onions, carrots, and celery and stir in beef stock and tomatoes.

Garlic Sauce is great for garlic lovers and made with garlic, lemon juice, and olive oil and added egg white. It is great on anything you would use mayonnaise on particularly grilled chicken and potatoes.

Nuoc Nam is a Vietnamese sauce that has a strong, fishy smell but is great for marinating meats and tofu. It is good as a dipping sauce for veggies and summer rolls.

Pesto sauces go with most anything and offer a smoky flavor from broiled sweet red peppers and eggplant. It can be made ahead of time and frozen until needed.

Classic tomato based marinara sauce is great for pizzas, pastas, and meat dishes. When additional spices are added it can becomes an enchilada sauce.
